2 cans chickpeas (garbanzo beans), drained and placed on towel to dry (preferably overnight)
1 Tb olive oil or coconut oil
your favorite seasoning (red pepper, sea salt, cumin, etc.)
After draining and allowing chickpeas to dry overnight, mix the chickpeas with the oil and seasoning. Roast for about 1 hour in a 400-degree oven. When cooled, you have a crunchy snack/topping! **Remember to allow them to dry completely or you will have mushy chickpeas.
